Ingredients
- 8 chicken breast pieces
- 1 cup chopped potatoes
- 1 cup chopped onions
- 1 cup grated carrots
- 1 medium-sized chopped tomato
- 2 cups chicken broth
- 2 cups water
- 1 tbsp. flour
- 1 tbsp. curry powder
- 1 tbsp. sugar
- 1 tbsp. vinegar
- Olive Oil
- Salt and pepper to taste
Instructions
Here are the instructions to do Chicken Breasts with Curry
- Step 01: Flatten the chicken breasts and cut them in half. Season with salt and pepper. Fry for 15 minutes, skin side up. Flip and fry for five more minutes. Set aside.
- Step 02: For the sauce, sauté potatoes, onions, carrots, and tomatoes. Add flour, then the broth and water. Stir in curry, vinegar, and sugar. Simmer for 30 minutes.
- Step 03: Pour the sauce over chicken and cook for another 10 minutes on low heat.
- Step 04: Serve with rice.
* Optional: Add 2 cups of peas if desired.
