Ingredients
- 1 kg chicken
- 4 tbsp. butter
- 2 tbsp. chopped parsley
- 2 tbsp. chopped onions
- 1 ½ tbsp. grated nutmeg
- 1 cup milk
- 1 cup chicken broth
- ½ cup flour
- 1 egg
- Salt to taste
- Breadcrumbs for coating
Instructions
Here are the instructions to do Chicken Croquettes
- Step 01: Boil the chicken, debone it, and cut it into small pieces. Fill 2 cups with these pieces.
- Step 02: Prepare a thick sauce by melting the butter over low heat. Add the flour while stirring, then the broth and milk. Add the chicken pieces, egg, onions, salt, parsley, and nutmeg.
- Step 03: Mix the preparation well, spread it in a dish, and refrigerate until it cools and thickens a bit.
- Step 04: Shape mixture into croquettes.
- Step 05: Prepare 4 cups of breadcrumbs seasoned with salt and nutmeg and 3 beaten eggs diluted in 3 tablespoons of milk
- Step 06: Roll the croquettes first in the breadcrumbs, then in the eggs, and then in the breadcrumbs again. Let them rest for 1 hour. This will allow the breadcrumbs to adhere better.
- Step 07: Rest for 1 hour, then deep fry until golden brown.
